Where else can you get a flight of craft beef? Nowhere. This is one of our signature offerings and it's a perfect example of our crafted beef experience. 
 
Whenever we have unique varieties of cattle on the farm, we offer limited release Crafted Beef Flights. What's in the Flight changes with what's on the menu. It's possibly the only opportunity to compare the flavors and textures of different kinds of beef in one package. All of these beef varieties are raised on our 3rd generation regenerative farm, a rarity in the beef world...but an opportunity for you.  
 
Our Crafted Ground Beef Flight was made for those who want the finest, healthies Ground Beef available. Ground Beef is one of the best reflections of the difference our regenerative, humane farming makes in flavor. Not to mention it looks awesome at a cookout to have three different beef burgers. 
 
This limited release flight currently contains these three crafted beef varieties:
 
Special Release #3 - Grain Finished American Wagyu: 50% Wagyu and 50% Angus that has been matured for a minimum of 40 months on pasture (over 20 months longer than commercial beef). Finished on lush Spring pastures containing Ryegrass, Crimson Clover, and Forbs with a daily helping of locally mixed grain feed. Expect a creamier color due to the extra fat, which is loaded with health benefits. This extra unsaturated fat results in a very smooth texture with a tender bite. You'll understand exactly what we mean as soon as you take it out of the package. The extra fat results in a higher fat to lean ratio, which we estimate is close to 25/75.
 
Grass-Fed and Grass-Finished South Poll Crossbreed: South Poll is a rare breed with roots tracing back to Scotland, India, and the Caribbean. Bred to finish specifically on grass, it offers an unparalleled grass-finished experience. Finished on Ryegrass, Crimson Clover, and Forbs after 20+ months on fescue. Expect an earthy, beefy flavor with a tender texture.
 
Grass-Fed and Grain-Finished Angus Crossbreed: We take our Angus-influenced cattle and finish them on a locally mixed, custom feed blend. The cows are offered this blend as a supplement to their primarily grass diet. No commercial feedlots here; these cattle have constant access to fresh pasture and shade trees. This creates a buttery, mellow flavor and an average fat content.
 
This Flight gives you a chance you won't find anywhere else: beef raised on the same farm but with differences in breed and finish. You can try each cut side by side to discover the differences in textures and flavors. 
 
All ground beef comes in one pound packs. All beef is dry aged for a minimum of two weeks, vacuum sealed, and flash frozen to preserve freshness.
