The Crafted Beef Flight contains:
3 New York Strip Steaks, one from each breed
3 Chuck Roasts, one from each breed
3 lbs. of Ground Beef, one pound from each breed

Where else can you get a flight of craft beef? Nowhere. This is our signature offering. 
 
Whenever we have unique varieties of cattle on the farm, we offer limited release Crafted Beef Flights. The Breeds and Cuts in the Flight change with what's on the menu. It's possibly the only opportunity to compare the flavors and textures of different kinds of beef in one package. All of these beef varieties are raised on our 3rd generation regenerative farm, a rarity in the beef world...but an opportunity for you.  
 
This limited release flight currently contains these three crafted beef varieties:
Special Release #3 - Grain Finished American Wagyu: 50% Wagyu and 50% Angus that has been matured for a minimum of 40 months on pasture (over 20 months longer than commercial beef). Finished on lush Spring pastures containing Ryegrass, Crimson Clover, Fescue, and Forbs with a daily helping of locally mixed grain feed. Very highly marbled, corresponding to an estimated MBS 9 on the Japanese beef grading system, which is much higher than USDA Prime. This beef is considered a rare delicacy.
Grass-Fed and Grass-Finished South Poll Crossbreed: South Poll is a rare breed with roots tracing back to Scotland, India, and the Caribbean. Bred to finish specifically on grass, it offers an unparalleled grass-finished experience. Tender and more mellow than our Aged on the Hoof beef. Finished on Ryegrass, Crimson Clover, and Forbs after 20+ months on fescue. Expect a moderate, beefy flavor with a tender texture.
Grass-Fed and Grain-Finished Angus Crossbreed: We take our Angus-influenced cattle and finish them on a locally mixed, custom feed blend. The cows are offered this blend as a supplement to their primarily grass diet. No commercial feedlots here; these cattle have constant access to fresh pasture and shade trees. This creates a buttery, mellow flavor and solid marbling paired with high tenderness.
 
This Flight gives you a chance you won't find anywhere else: beef raised on the same farm but with differences in breed and finish. You can try each cut side by side to discover the differences in textures and flavors. 
 
All Steaks and Roasts are individually packaged single cuts. All ground beef comes in one pound packs. All beef is dry aged for a minimum of two weeks, vacuum sealed, and flash frozen to preserve freshness.
