Beef Shank, which is also referred to as Osso Bucco after the popular Italian dish, is a tough, but flavorful cut of beef with a great price. This is a great example of a muscle that's frequently used by the animal devoloping a robust, beefy flavor.
Though popular in many other cultures, Americans haven't had much exposure to Shank. Those willing to experiment will be rewarded with a delicious alternative to more expensive cuts. Great in soups, stews, braised, or in osso bucco, it's a versatile cut that lends itself well to many types of slow cooking. We often slow smoke it then shred it into Beef Shank tacos.
Our Beef Shanks are cut about 2" thick to handle a long, slow cook. They are dry aged for a minimum of two weeks, cut with the bone in for added flavor, and packaged two sections per pack. They are vacuum sealed and flash frozen for optimal freshness.
