Beef Oxtail contains gelatin rich meat and is high in collagen. It requires a low and slow cook to help break down the connective tissues, but is wonderful for flavor and texture in soups and stews and is very popular around the world. The meat mixed amongst the connective tissue is quite tender.
Our Beef Oxtail is partially vacuum sealed in approximately two to three pound packages and flash frozen for optimal freshness.
Important Note: Because bones are notoriously bad at piercing packaging (like all bone in cuts), these are usually not completely vacuum sealed. There will likely be some air and ice crystals in the packaging. This will not effect the eating quality and is necessary to maintain packaging integrity.
